PUMPKIN SPICE CHEESECAKE BARS

INGREDIENTS

CRUST
2 cups almond flour
1 cup coconut
2 scoops @myloloflo Pumpkin Spice Creamer
1/4 cup brown sugar
1/2 tsp salt
1 tsp cinnamon
3 tbsp coconut oil
1 egg

FILLING
1-8oz package Neufchâtel cheese
1-15oz package pumpkin (unsweetened)
1/4 cup coconut oil
1-13.5 oz coconut cream (unsweetened)
3/4 cup baking stevia
1 tsp pumpkin spice
3 scoops @myloloflo Pumpkin Spice Creamer
2 eggs
1/2 tsp salt

DIRECTIONS

  1. Preheat oven to 350F.
  2. Spray a 9x13 pan with nonstick cooking spray.
  3. Mix crust ingredients in one bowl and filling ingredients in a second bowl.
  4. Press crust into the bottom of the pan and bake for 5 minutes.
  5. Take the crust out and place filling on top.
  6. Bake for 40 minutes.
  7. Let cool and refrigerate for 2-3 hours (overnight is probably best) before cutting into squares.
  8. Top with pecans or whipped cream.
