DIRECTIONS
Preheat oven to 350F.
In a skillet over medium heat, cook the bacon until it's crispy. Once done, place the cooked bacon on paper towels to drain excess grease. Once cooled, crumble or chop the bacon into smaller pieces.
Cut the avocados in half and remove the pits.
Carefully scoop out a small amount of avocado flesh from each half, creating a larger well for the egg. Be gentle not to damage the avocado.
Crack one egg into each avocado half, placing it in the well you created earlier. Some egg white might overflow, but that's okay.
Place the avocado halves on a baking sheet or in a baking dish. Bake in the preheated oven for about 12-15 minutes, or until the egg whites are set and the yolks are slightly runny.
Once the eggs are cooked to your liking, remove the avocados from the oven. Sprinkle the crumbled bacon on top of each avocado half. You can also add any other desired toppings, like chopped fresh herbs or grated cheese.
